Vegan Optional Protein Blueberry Muffins

Whenever I post a photo of these on my Instagram, I am automatically asked for the recipe! These muffins are TO DIE FOR (even people who don't like healthy or protein added in will like these!) I usually guestimate when I'm baking them, but I actually measured things today so I could write this up for all of you :) If you try them, let me know!

Turn oven on to 350 degrees. Spray muffin pans (I usually use an organic olive oil spray)

2 scoops Unico Nutrition Protein Powder (I used vanilla) VEGAN OPTION: Unico Nutrition Vegan Vanilla Protein

1 cup stevia

1 Chobani Greek Blueberry yogurt (can use vanilla or unflavored too) VEGAN OPTION: sub for applesauce or omit

1 cup rolled oats

1/2 cup unsweetened vanilla almond milk

1/2 cup egg whites VEGAN OPTION: Omit, add an additional 1/2 cup unsweetened vanilla almond milk

Dash baking soda

Dash baking powder

MIX! Make sure everything is mixed before you add in the blueberries. Then fold in however many you would like! I usually wing this part but it's probably between a half cup and full cup.

Fill muffin tins, bake at 350 for 12-15 minutes depending on the size of your muffins. ENJOY :)

Yes, these are low calorie and high protein. I don't like to title things this anymore as I am not counting macros but do believe they are a tasty part of breakfast or snack that is more filling because of the protein and healthy fats.

Protein Powder info: I always use Unico protein as I am an ambassador for them and genuinely love their protein (use code JULES1 for 20% off all products) but really any good tasting protein powder will work for this recipe.
